Do you want to taste the authentic brunyols from Empordà at home? Try them with the recipe for brunyols from Empordà:

Ingredients:

  • 1 kg - Farina
  • 7 - Ous
  • 25 g - Compressed Yeast
  • 300 g - Sugar
  • 30 g - Anise
  • 30 g - Coriander
  • 10 g and a pinch - Salt
  • 3 peels - Grated lemon
  • 10 cl - Anise
  • 5 cl - Milk
  • Oil

Preparation:
Dissolve the yeast in the warm milk. Place the flour on a marble counter in the shape of a volcano and gradually add all the ingredients except the oil and 50g of sugar. Knead for a long time until the dough is elastic and smooth, so that it doesn't break when stretched. Form the dough into a ball, place it in a bowl, cover it with a cloth, and let it rest in a warm place for about 2 hours, until it has doubled in size. Take pieces of dough and, with oiled fingers, shape them into rounds, make a hole in the middle, and fry them in fairly hot oil. When they are golden brown on one side, turn them over. Drain the bruñuelos and sprinkle them with sugar.

Variations:
Once made, you can sprinkle the Brunyols with anise or muscatel.
You can infuse them with matafaluga and cilantro.
