The quality and uniqueness of Empordà olive oil are guaranteed by the region's specific olive varieties. Depending on the variety used, the flavor and sensations of the oil vary: from the delicate balance of sweetness and bitterness found in the Argudell and Corivell varieties, to the fruity, ripe, and slightly spicy character of oil made from the Verdial variety (also known as Llei de Cadaqués).

In all cases, Empordà olive oil has a clear, clean, and transparent appearance and offers remarkable complexity, with aromas reminiscent of fennel, almond, and anise.
