It is produced from varieties of wheat (Anza and Florence Aurore) grown in the Aiguamolls de L’Empordà Natural Park. This wheat is produced using sustainable production techniques that respect the environment as much as possible and use a minimum of chemical products. The tramontana, the north wind that often blows across the Empordà plain, gives its name to this product, as the varieties of wheat used must be resistant to its buffeting.
